Beets

It wasn’t until later in my life that I become fascinated with beets.
Growing up I usually had them out of the can during thanksgiving and usually freaked out when they’d leave the toilet bowl looking a bit red.

It’s not until I grabbed a beetroot by it’s leafy stem and pulled it from the ground that my interest grew.
I mean that color!

Not only do they taste good when they are eaten fresh they are extremely good for you as well.
These particular beets took about 3 months to grow until we were able to enjoy them in this pasta salad.

All I know is that when I get the chance I’ll definitely be growing these in the garden.
